Pumpkin Pancakes

Pumpkin pancakes that are healthy?  Oh yes! 
Only 128 calories per large pancake.  Enjoy without guilt!
 
 
Ingredients:
  • 1.5 cups whole wheat flour
  • 1.5 cups almond milk
  • 1 large egg
  • 1/2 can of pumpkin
  • 1/4 tsp. salt
  • 1 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. powdered ginger
  • 2 packets Stevia
  • 2 tsp. brown sugar
 
Directions:
 
1.) Combine all ingredients.
2.) Spray a skillet or griddle with non stick cooking spray and cook pancakes over medium high heat.
3.) Makes 7 large pancakes or 14 small.
